Jamaican Sweet Potato Pudding

Ingredients:

  • 2 pounds sweet potatoes, peeled and grated
  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • 1 cup grated coconut (fresh or dried)
  • 1 cup raisins
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup evaporated milk
  • 1 cup coconut milk
  • 1/4 cup melted butter
  • 2 tablespoons rum (optional)
  • 1 tablespoon lime juice
  • 1 tablespoon grated lime zest

For the Coconut Topping:

  • 1 cup coconut milk
  • 1/2 cup brown sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or line it with parchment paper.
  2. In a large bowl, combine the grated sweet potatoes, flour, brown sugar, grated coconut, raisins, cinnamon, nutmeg, vanilla extract, baking powder, and salt. Mix well to ensure all the ingredients are evenly distributed.
  3. In a separate bowl, whisk together the evaporated milk, coconut milk, melted butter, rum (if using), lime juice, and grated lime zest.
  4. Pour the wet mixture into the bowl with the sweet potato mixture. Stir well until everything is thoroughly combined and the batter is smooth.
  5. Transfer the batter to the prepared baking dish, spreading it out evenly.
  6. In a small saucepan, heat the coconut milk for the topping over medium heat. Add the brown sugar, vanilla extract, and ground cinnamon. Stir continuously until the sugar has dissolved and the mixture thickens slightly, about 5 minutes.
  7. Pour the coconut topping evenly over the sweet potato batter in the baking dish.
  8. Place the baking dish in the preheated oven and bake for 1 hour to 1 hour and 15 minutes, or until the pudding is set and the top is golden brown.
  9. Remove the pudding from the oven and let it cool in the baking dish for a few minutes.
